The origin: Prohibition and clandestine bars

Between 1920 and 1933, the United States banned the production and sale of alcohol under what was known as Prohibition. Far from ending consumption, the ban pushed it underground: thousands of hidden bars appeared in basements, back rooms and nameless venues, which you could only enter with a password or by recommendation.

Those clandestine bars had an unexpected effect on cocktails. Since the liquor available was often of poor quality, bartenders started mixing it with juices, syrups and other ingredients to mask the flavor. The new speakeasies recovered the aesthetic (dim lighting, wood, period details) but combined it with a much higher level of cocktail craft.
